Ingredients

  • Main Ingredients:
  • 2 cups cooked chicken shredded or diced
  • 12 oz pasta penne or rotini
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • ½ cup BBQ sauce
  • Flavor Base:
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ small onion diced
  • Add-Ins:
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • Optional Add-Ins:
  • Corn kernels
  • Bell peppers
  • Red pepper flakes
  • Fresh parsley or green onions

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion and cook for 3–4 minutes until softened. Add garlic and cook for 30 seconds.
  • Pour in chicken broth, milk (or cream), and BBQ sauce. Stir well, then add uncooked pasta.
  • Bring to a gentle boil, then reduce heat and simmer uncovered, stirring occasionally, for 10–12 minutes until pasta is tender and liquid is mostly absorbed.
  • Stir in cooked chicken and shredded cheese. Mix until cheese is melted and sauce is creamy.
  • Season with salt and pepper to taste. Garnish with optional toppings and serve warm.

Notes

  • Use a high-quality BBQ sauce for the best flavor.
  • Stir occasionally to prevent pasta from sticking.
  • Add cheese at the end to maintain a smooth texture.
  • Adjust consistency with extra milk or broth if needed.
  • Do not overcook pasta to avoid mushy texture.
