  • 1/2 cup peanut butter Creamy or crunchy, based on preference.
  • 2 cups milk Dairy or non-dairy.
  • 1/4 cup honey or maple syrup For sweetness.
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon Optional
  • to taste salt

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
  • In a large bowl, combine the rolled oats, baking powder, cinnamon (if using), and a pinch of salt; stir thoroughly.
  • In another bowl, mix the mashed banana, peanut butter, milk, honey (or maple syrup), and vanilla extract; whisk until smooth.
  • Gradually pour the wet mixture into the dry ingredients, stirring until just combined; fold in any optional mix-ins like chocolate chips or nuts.
  • Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.

Baking

  • Place the muffin tin in the oven and bake for about 25-30 minutes or until the tops are golden brown.
  • Allow the baked oatmeal cups to cool in the tin for a few minutes before transferring them to a wire rack.

Notes

These cups can be stored in an airtight container in the fridge for up to a week. They can also be frozen for up to 3 months. Reheat in the microwave for about 30-60 seconds before serving.
