For the Pumpkin Cheesecake Filling

  • 1 cups pumpkin puree (not pumpkin pie filling)
  • 1 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt

For the Pecan Pie Topping

  • 1.5 cups pecan halves
  • 0.33 cups brown sugar
  • 0.33 cups corn syrup
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until thoroughly combined.
  • Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer.
  • Bake the crust for about 10 minutes until golden. Once baked, set it aside to cool.

Making the Pumpkin Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add the pumpkin puree, granulated sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Beat until well combined and smooth—scraping the sides of the bowl as needed.
  • Pour the filling over the cooled crust and smooth the top with a spatula.

Baking the Cheesecake

  • Place the springform pan in the oven and bake for 55-65 minutes. The edges should be set, and the center may have a slight jiggle.
  • Turn off the oven and let the cheesecake cool inside for at least one hour to help prevent cracks in the surface.

Creating the Pecan Pie Topping

  • In a separate mixing bowl, combine the pecan halves, brown sugar, corn syrup, egg, melted butter, vanilla, and salt.
  • Once the cheesecake has cooled for an hour, evenly spread the pecan topping over the pumpkin cheesecake.

Final Baking

  • Return the cheesecake to the oven and bake for an additional 20 minutes.
  • Allow the cheesecake to cool completely at room temperature, then chill in the refrigerator for at least four hours, preferably overnight.
