Ingredients
  

  • 2 cups pomegranate juice fresh or 100% bottled juice
  • ½ cup fresh lime juice
  • ¾ cup granulated sugar
  • ½ cup water
  • 1 teaspoon lime zest
  • Pinch of salt
  • Optional Garnish
  • Fresh pomegranate seeds
  • Lime slices
  • Mint leaves

Instructions
 

  • In a small saucepan, combine sugar and water over medium heat.
  • Stir until the sugar fully dissolves to create a simple syrup.
  • Remove from heat and allow the syrup to cool completely.
  • In a mixing bowl, combine pomegranate juice, lime juice, lime zest, and the cooled simple syrup.
  • Add a pinch of salt and stir until fully combined.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes) until it reaches a soft-serve texture.
  • Transfer the sorbet to a freezer-safe container.
  • Freeze for 2–3 hours until firm enough to scoop.
  • Scoop into bowls and garnish with pomegranate seeds, mint leaves, or lime slices before serving.

Notes

  • Chill the mixture before churning for a smoother sorbet texture.
  • If the sorbet becomes too hard, allow it to sit at room temperature for 5 minutes before scooping.
  • Use 100% pomegranate juice without added sugar for the best flavor balance.
  • Adjust sweetness by adding a little more simple syrup if the juice is very tart.
