Ingredients
  

For the Salsa

  • 1 riped ripe mango, diced
  • 1/2 cup red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 small jalapeño, minced (optional for spice) Adjust spiciness to taste
  • 1 lime Juice of 1 lime
  • to taste Salt and pepper
  • 1 tbsp Olive oil
  • to garnish Fresh cilantro, chopped

For the Salmon

  • 2 fillets salmon fillets

Preparing Your Salsa

  • In a medium bowl, combine the diced mango, red onion, red bell pepper, and jalapeño (if using).
  • Squeeze in the lime juice and sprinkle with salt and pepper to taste.
  • Gently toss the mixture until well combined and let sit to meld flavors.
  • Add chopped cilantro if desired.

Cooking the Salmon

  • Heat olive oil in a skillet over medium-high heat.
  • Season the salmon fillets with salt and pepper and place them skin-side down in the skillet.
  • Cook for about 4-5 minutes on the skin side, then flip and cook for an additional 3-4 minutes.
  • Remove fillets from the skillet and top with mango salsa. Garnish with cilantro.

Notes

You can customize the salsa with pineapple or avocado for variations. Serve with coconut rice or roasted vegetables for a complete meal.
