  • 8 oz cheese tortellini
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, pour in the heavy cream. Bring it to a simmer, stirring frequently. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
  • Return the cooked shrimp to the skillet, followed by the drained tortellini. Toss everything together until the tortellini is well-coated in the Alfredo sauce.
  • Transfer the dish to a serving plate or bowl. Garnish with fresh parsley and additional Parmesan if desired.

Notes

Don’t overcook the shrimp; take them off the heat as soon as they turn pink. Use fresh ingredients for the best flavor. Consider adding vegetables like spinach or broccoli for added nutrition.
