  • 1 pound ground beef (or turkey for a lighter option)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 large bell peppers (red, green, or yellow), diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups vegetable or beef broth
  • 1 cup uncooked rice (white or brown)
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, parsley, or sour cream

Preparation

  • In a skillet over medium heat, brown the ground beef (or turkey) with the chopped onions and minced garlic. Drain excess fat.
  • Transfer the meat mixture to the slow cooker. Add the diced bell peppers, diced tomatoes, tomato sauce, broth, and uncooked rice.
  • Stir in the Italian seasoning, along with salt and pepper to taste. Mix everything together.
  • Set your slow cooker on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, give the soup a good stir. Add more broth if it’s too thick.
  • Serve hot, garnished with shredded cheese, parsley, or sour cream.
