Line an 8×8 inch baking pan with parchment paper for easy removal.
In a bowl, mix the chocolate cookie crumbs and melted butter until fully combined.
Press the mixture firmly into the bottom of the prepared pan to form the crust.
Freeze the crust for 10 minutes until firm.
Spread the softened vanilla ice cream evenly over the crust and smooth the top with a spatula.
Freeze for 20–30 minutes until the ice cream layer becomes firm.
In a bowl, mix together the caramel sauce, peanut butter, sweetened condensed milk, and roasted peanuts until thick and creamy.
Spread the peanut caramel mixture evenly over the frozen ice cream layer.
Return the pan to the freezer for 30 minutes until the layer sets.
In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each until smooth.
Pour the melted chocolate over the top layer and spread evenly.
Freeze the bars for 3–4 hours until fully firm.
Lift the dessert out of the pan using the parchment paper and slice into bars before serving.
