Ingredients
  

  • Cookie Crust
  • 1 ½ cups chocolate cookie crumbs
  • 5 tablespoons melted butter
  • Ice Cream Layer
  • 2 cups vanilla ice cream slightly softened
  • Peanut Caramel Layer
  • ¾ cup caramel sauce
  • ½ cup roasted peanuts
  • ½ cup peanut butter
  • ½ cup sweetened condensed milk
  • Chocolate Topping
  • 1 ½ cups chocolate chips
  • 2 tablespoons coconut oil or butter

Instructions
 

  • Line an 8×8 inch baking pan with parchment paper for easy removal.
  • In a bowl, mix the chocolate cookie crumbs and melted butter until fully combined.
  • Press the mixture firmly into the bottom of the prepared pan to form the crust.
  • Freeze the crust for 10 minutes until firm.
  • Spread the softened vanilla ice cream evenly over the crust and smooth the top with a spatula.
  • Freeze for 20–30 minutes until the ice cream layer becomes firm.
  • In a bowl, mix together the caramel sauce, peanut butter, sweetened condensed milk, and roasted peanuts until thick and creamy.
  • Spread the peanut caramel mixture evenly over the frozen ice cream layer.
  • Return the pan to the freezer for 30 minutes until the layer sets.
  • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each until smooth.
  • Pour the melted chocolate over the top layer and spread evenly.
  • Freeze the bars for 3–4 hours until fully firm.
  • Lift the dessert out of the pan using the parchment paper and slice into bars before serving.

Notes

  • Freeze each layer before adding the next to keep the layers clean and stable.
  • Slightly softened ice cream spreads more easily but should not be melted.
  • Let the bars sit at room temperature for 2–3 minutes before cutting to prevent the chocolate from cracking.
  • Sprinkle extra chopped peanuts or drizzle caramel on top for decoration.
