- 2 cups old-fashioned oats
- ¾ cup all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp salt
- ½ cup raisins
- ½ cup brown sugar packed
- ⅓ cup honey or maple syrup
- ½ cup butter or coconut oil melted
- 1 large egg
- 1 tsp vanilla extract
Preheat oven: Preheat to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang. Lightly grease.
Mix wet ingredients: In a large bowl, whisk melted butter, brown sugar, honey (or maple syrup), egg, and vanilla until smooth.
Mix dry ingredients: In a separate bowl, combine oats, flour, baking powder, cinnamon, and salt.
Combine: Add dry ingredients to wet ingredients and stir just until combined. Fold in raisins.
Bake: Press mixture evenly into the prepared pan. Bake 18–22 minutes, until edges are lightly golden and center is set but soft.
Cool & slice: Cool completely in the pan, then lift out and cut into bars.
