  • 0.5 cup cilantro roughly chopped
  • 3 pieces green onions chopped

Dressing Ingredients

  • 0.5 cup mayonnaise can substitute with Greek yogurt
  • 2 pieces limes juice of
  • 2 tablespoons sugar adjust based on your preferences
  • 1 teaspoon garlic powder can substitute with fresh minced garlic

Seasoning

Preparation

  • Start by gathering and measuring all your ingredients.
  • In a large bowl, combine the cole slaw mix and corn, mixing them gently.
  • Stir in the minced jalapeños, cilantro, and green onions.
  • In a separate bowl, whisk together the mayonnaise (or Greek yogurt), lime juice, sugar, garlic powder, salt, and pepper until smooth.
  • Pour the dressing over the slaw mixture, tossing everything until evenly coated.
  • Cover and let your slaw sit in the refrigerator for at least 30 minutes to allow the flavors to meld.
  • Serve cool!

Notes

For a milder flavor, reduce the amount of jalapeño or omit the seeds entirely. This slaw actually tastes better after a day in the fridge. Consider tossing in some nuts or seeds for added texture. If cilantro isn’t your favorite, replace it with parsley or mint.
