Ingredients
  

For the Steak

  • 1 pound steak (sirloin or flank steak)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For the Rice

  • 1 cup long-grain rice (white or brown)
  • 2 cups chicken or vegetable broth
  • 1 teaspoon lime juice
  • Fresh cilantro for garnishing (optional)

For the Queso

  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese
  • 1/2 cup milk
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Jalapeños or diced tomatoes for added flavor (optional)

Preparation

  • In a medium saucepan, combine the rice and broth, bringing it to a boil. Reduce heat, cover, and let simmer until the rice is tender (about 15-20 minutes for white rice; longer for brown). Stir in lime juice and fluff with a fork once done.

Cooking the Steak

  • While the rice is cooking, slice the steak into thin strips. Heat the olive oil in a skillet over medium-high heat. Season the steak strips with garlic powder, onion powder, smoked paprika, salt, and pepper. Sauté until cooked to your desired doneness, around 3-4 minutes for medium-rare.

Making the Queso

  • In a saucepan over low heat, combine cream cheese, shredded cheddar, and milk. Stir continuously until melted and smooth. Add cumin and chili powder for extra flavor. Mix in jalapeños or tomatoes if desired.

Assembling the Bowl

  • Start with a generous layer of rice at the bottom of your bowl. Add the sautéed steak on top, then drizzle with warm queso. Sprinkle fresh cilantro on top, if you like.

Notes
