Ingredients
  

  • 2 cups fresh strawberries sliced
  • 200 g vegan ladyfingers or vegan sponge cookies
  • 1 cup coconut cream
  • 1 cup vegan cream cheese
  • ¼ cup maple syrup or sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • ½ cup plant-based milk almond, oat, or soy
  • 1 tablespoon cornstarch optional, for thickening sauce
  • Extra strawberries for garnish

Instructions
 

  • In a small saucepan, combine 1 cup sliced strawberries, maple syrup (or sugar), and lemon juice.
  • Cook over medium heat for about 5 minutes, stirring occasionally until the strawberries soften and release juice, creating a syrup-like sauce.
  • Remove from heat and allow the strawberry sauce to cool slightly.
  • In a mixing bowl, combine coconut cream, vegan cream cheese, and vanilla extract.
  • Whisk or beat with a hand mixer until the mixture becomes smooth and fluffy.
  • Quickly dip each vegan ladyfinger into plant-based milk (do not soak too long).
  • Arrange a layer of soaked cookies at the bottom of a serving dish.
  • Spread a layer of vegan cream mixture over the cookies.
  • Add a layer of sliced strawberries and drizzle strawberry sauce on top.
  • Repeat the layers of cookies, cream, and strawberries until the dish is filled.
  • Cover and refrigerate for at least 4 hours or overnight so the dessert sets and the flavors blend.
  • Before serving, garnish with fresh strawberry slices, powdered sugar, or mint leaves.

  • Dip ladyfingers quickly in plant-based milk to prevent sogginess.
  • Use ripe, firm strawberries for the best flavor and texture.
  • Chilling overnight improves both the texture and flavor of the tiramisu.
  • For a thicker strawberry sauce, mix cornstarch with a little water and stir into the sauce while cooking.
