Ingredients

Main Ingredients

  • 1 pound ground beef or turkey for a healthier option
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen mixed vegetables (like peas and carrots)
  • 2 cups shredded cheese (cheddar is a favorite)
  • 1 pound frozen Tater Tots
  • Salt and pepper to taste
  • Optional: onion or garlic powder for added flavor

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the ground beef until it is cooked through. Drain any excess grease. If desired, add onion or garlic powder for extra flavor.
  • Stir in the cream of mushroom soup and frozen mixed vegetables into the skillet. Season with salt and pepper to taste, and mix until well combined.
  • Transfer the beef mixture into a greased 9x13-inch baking dish. Sprinkle 1 cup of shredded cheese on top evenly.
  • Arrange the frozen Tater Tots in a single layer over the cheese.
  • Top with the remaining cheese and a little more salt and pepper if desired.

Baking

  • Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for another 15-20 minutes, or until the Tater Tots are golden brown and crispy.

Serving

  • Let the casserole cool for a few minutes before serving. Serve hot and enjoy!

Notes

For maximum crispness, do not overcrowd the Tater Tots. You can prepare this casserole a day in advance but wait to add Tater Tots until ready to bake. Store leftovers in an airtight container in the refrigerator for up to three days.
