- 1½ lbs chicken thighs or chicken breast cut into chunks
- Skewers wooden or metal
- Teriyaki Marinade:
- ¼ cup soy sauce
- 2 tablespoons brown sugar or honey
- 2 garlic cloves finely minced
- 1 teaspoon fresh grated ginger
- 1 tablespoon rice vinegar or lemon juice
- 1 tablespoon cooking oil
- Optional Toppings:
- Sesame seeds
- Chopped green onions
Cut the chicken into evenly sized pieces and pat them dry.
In a bowl, combine soy sauce, sugar, garlic, ginger, vinegar, and oil to create the marinade.
Add the chicken to the marinade, mix well, and refrigerate for at least 30 minutes or up to 4 hours.
Thread the marinated chicken onto skewers, spacing pieces slightly apart.
Heat the grill to medium-high and cook the skewers for 8–10 minutes, turning regularly.
