  • 2 cloves garlic Minced for robust flavor.
  • 1 tsp dried oregano To enhance the aromatic notes.

Preparation

  • Slice the zucchinis into thin rounds. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture. Pat dry with a towel to remove any water.
  • In a pan, heat a drizzle of olive oil over medium heat. Add minced garlic and cook until fragrant (about 30 seconds).

Assembly

  • In a baking dish, start with a layer of marinara sauce. Add a layer of zucchini slices, followed by dollops of ricotta cheese, a sprinkle of mozzarella, and a bit of Parmesan. Season with oregano, salt, and pepper. Repeat layering until all ingredients are used, finishing with marinara, mozzarella, and Parmesan on top.

Baking

  • Preheat your oven to 375°F (190°C). Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbling and golden.

Serving

  • Let it sit for about 10 minutes before slicing. This helps to set the layers.
