  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • Pink or red food coloring
  • ¼ cup mini chocolate chips for watermelon seeds

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pink food coloring
  • Green food coloring

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  • In a bowl, whisk together the flour and a pinch of salt.
  • In a separate mixing bowl, beat the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the flour mixture and milk, alternating between the two, mixing until smooth.
  • Add a few drops of pink or red food coloring and gently fold in the mini chocolate chips.
  • Fill the cupcake liners about ⅔ full with batter.
  • Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely before frosting.
  • To make the frosting, beat butter, powdered sugar, milk, and vanilla until smooth and fluffy.
  • Divide frosting into two bowls. Color one portion pink and the other green.
  • Pipe pink frosting onto each cupcake, then add a thin green border around the edge to resemble a watermelon rind.
  • Sprinkle mini chocolate chips on top as decorative watermelon seeds.

Notes

  • Make sure the butter and eggs are at room temperature for a smoother batter.
  • Avoid overmixing the batter to keep the cupcakes light and fluffy.
  • Always frost cupcakes only after they are completely cooled.
  • Start with small amounts of food coloring and adjust gradually.
