Preparation

  • Begin by dicing your watermelon, onion, and bell pepper into small, uniform pieces.
  • In a large mixing bowl, combine the diced watermelon, onion, bell pepper, and jalapeño. Gently toss to ensure all the ingredients are evenly distributed.
  • Stir in the chopped cilantro and squeeze the juice of the limes over the mixture, then toss gently to combine.
  • Sprinkle salt and black pepper to taste, starting with a little and adjusting as needed.
  • Let your salsa sit in the fridge for about 30 minutes before serving for the best flavor.

Notes

Store leftover watermelon salsa in an airtight container in the refrigerator for up to 3 days. Best enjoyed fresh.
