- 2 cups vanilla sandwich cookies crushed
- 8 oz cream cheese softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Pink or red food coloring
- 1/4 cup mini chocolate chips
- 1 1/2 cups white chocolate or candy melts
- Green food coloring
Line a baking sheet with parchment paper.
In a bowl, mix crushed cookies and cream cheese until combined.
Add powdered sugar and vanilla extract, mixing until smooth.
Add pink or red food coloring and mix evenly.
Fold in mini chocolate chips.
Scoop and roll into small balls, then place on baking sheet.
Chill in the fridge for 30 minutes.
Melt white chocolate until smooth.
Dip each truffle into melted chocolate and return to parchment.
