Instructions
- Season the rice
- While the rice is still warm, gently fold together rice vinegar, sugar, and salt. Mix carefully to avoid mashing.
- Chill the rice
- Line a baking dish with parchment paper. Press rice firmly into an even layer about ¾-inch thick. Cover and refrigerate for at least 1 hour until firm.
- Cut the rice
- Remove chilled rice and cut into small rectangles or squares.
- Crisp the rice
- Heat a skillet over medium-high heat with enough oil to coat the bottom.
- Add rice pieces in a single layer. Cook 3–4 minutes per side until deeply golden and crispy. Transfer to a paper towel-lined plate.

- Assemble
