  • 1 large ripe avocado sliced
  • 3 tbsp rice vinegar

  • ½ tsp salt
  • 1 tbsp sesame oil
  • Soy sauce or tamari for serving
  • Lemon juice for avocado
  • Spicy Mayo Optional
  • ¼ cup mayonnaise
  • 1 –2 tsp sriracha
  • Pantry Staples
  • Neutral oil avocado or vegetable oil
  • Sesame seeds optional garnish

Instructions
 

  • Season the rice
  • While the rice is still warm, gently fold together rice vinegar, sugar, and salt. Mix carefully to avoid mashing.
  • Chill the rice
  • Line a baking dish with parchment paper. Press rice firmly into an even layer about ¾-inch thick. Cover and refrigerate for at least 1 hour until firm.
  • Cut the rice
  • Remove chilled rice and cut into small rectangles or squares.
  • Crisp the rice
  • Heat a skillet over medium-high heat with enough oil to coat the bottom.
  • Add rice pieces in a single layer. Cook 3–4 minutes per side until deeply golden and crispy. Transfer to a paper towel-lined plate.
  • Prepare toppings
  • Toss avocado slices lightly with lemon juice. Mix mayonnaise and sriracha if using spicy mayo.
  • Assemble
  • Top each crispy rice piece with avocado, smoked salmon, and a drizzle of spicy mayo. Finish with sesame seeds and a light splash of soy sauce if desired.
