  • 9 –12 oz cheese tortellini fresh or refrigerated preferred
  • 2 cups fresh spinach or kale roughly chopped
  • Seasonings & Flavor Base
  • tsp Italian seasoning
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • Pinch of red pepper flakes optional
  • Pantry Staples
  • 4 cups chicken broth or vegetable broth
  • 1 cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese

Instructions
 

  • Pre-Cooking Prep
  • Dice the onion and mince the garlic.
  • Wash and chop greens.
  • Measure broth, cream, and seasonings so everything is ready.
  • Cooking Method
  • Heat olive oil or butter in a large pot over medium heat.
  • Add onion and cook 3–4 minutes until soft and translucent.
  • Stir in garlic and cook 30 seconds until fragrant.
  • Add Italian seasoning, salt, pepper, and red pepper flakes.
  • Pour in chicken broth and bring to a gentle boil.
  • Add tortellini and cook according to package directions (usually 5–7 minutes).
  • Reduce heat to medium-low and stir in cream.
  • Add spinach and cook 1–2 minutes until wilted.
  • Stir in Parmesan until melted and smooth.
  • Doneness & Texture Check
  • Tortellini should be tender, not mushy
  • Soup should be creamy and lightly thickened
  • Greens should be wilted but still bright
  • Resting & Final Touches
  • Remove from heat and rest 2–3 minutes
  • Taste and adjust salt and seasoning
